Australia’s French bistro revolution

Damien Pignolet knows French food. In 1981 the fourth-generation Australian of French descent took over Claude’s restaurant in Woollahra, which epitomised French cuisine in Australia. Later he introduced possibly the first Parisian-style bistro to Sydney with Bistro Moncur.

When asked about traditional French food in Australia, Pignolet waxes lyrical about a fricassee of chicken at the original Bécasse, which opened a decade ago in Surry Hills. Read the full story here.

    Since I have resided semi-rurally for a number of years, this is an amazingly informative article for me to bring me up to date with what is happening on the food scene in Sydney at present. Was for decades an E Suburbs business gal – in the days of tax deductible business lunches/dinners both the original ‘Claude’s’ and ‘Le Trianon’ with a large handful of others were a weekly delight where I learned to appreciate food when on home soil. Tempus fugit . . .
